The Wonders of: Eggs

We go through at least one dozen eggs per week in my home. We love eggs. My fiance especially loves eggs, which makes it easy for me to cook for him when he comes home at 9:30pm from work.

We eat eggs almost every way and at any time. Omelet for dinner? Yes. Fried eggs for brunch? Sure. Really the only time we do not eat eggs is at breakfast time! Eggs sometimes get a bad rep as being high in cholesterol or fattening. This is not the case. Eggs are actually really good for you!

First of all, eggs are packed with nutrients. The egg yolk, though often thought to be bad for you, is actually packed with the good form of cholesterol and plenty of vitamins that are essential to our bodies.

Eggs can also make you happy! Egg yolks are packed full of a Vitamin B nutrient called choline. Choline is associated with better neuroligical function as well as better fetal neurological development in pregnant women. Choline is also associated with releasing happy hormones {serotonin, dopamine and norephinephrine} when it is broken down in your body.

Egg yolks also contain nutrients that help to promote your vision. Carrots aren’t the only ones that are good for your eyes!

Egg whites are considered the perfect protein because their amino acids are the most digestible by humans. That’s pretty awesome if you ask me!

We like to add eggs to almost anything. You can make:

omletes

fried eggs

poached eggs

fried eggs and cabbage

fried eggs and rice {if you are not carb restricted}

scrambled eggs with toast and bacon

breakfast burrito

That’s just the tip of the ice berg people!
