Low Carb Breakfast Burrito

If you didn’t gather already, we love eggs at our house. When I bought my favorite low-carb, high fiber tortillas the other day, I immediately thought of making breakfast burritos. Eggs and tortillas? Heck yes!

I thought and thought about how to go about this. Should I make them tex-mex? Should I just go simple? I finally settled on a combination and I’ve made them both ways and they are delicious any way you decide to make them!

Low Carb Breakfast Burrito

Breakfast Burritos:

You’ll Need per 2 people:

2 low carb, high fiber tortillas

4 eggs, scrambled

2 stalks of green onions, chopped and separate the green parts from the white parts

1/2 small sweet potato, cubed

1 small tomato, chopped

salt and pepper

Chili powder {optional but adds a nice flavor}

You can add: bacon, sausage, ham, mushrooms…anything really. Or you can keep it simple and just do eggs!

1. Cube your sweet potato and place it on a microwave safe plate. Microwave for at least 5 minutes, until tender.

2. While your sweet potato is in the microwave, set up two pans on the stove. One for warming your tortillas, and one for cooking your eggs and browning your sweet potatoes.

3. If your green onions and tomatoes are not chopped, go ahead and do that now. You can also scramble your eggs in a bowl and set aside.

4. In your pan for cooking, heat a tablespoon of olive oil to medium heat. Add in the white parts of your green onions.

5. Once fragrant, add in your sweet potatoes from the microwave. Salt and pepper to taste. Sprinkle a little bit of chili powder on your sweet potatoes at this point.

6. Cook your sweet potatoes until they are golden brown on all sides. Remove back to the plate you used to microwave them.

7. Heat your warming pan to medium heat.

8. In your cooking pan, add about 1 tablespoon of butter over medium heat. Pour in your four scrambled eggs and cook to your preference. Half way through, check your tortilla and make sure it is hot. Once hot, place on a plate and put your second tortilla on the pan. The second one will warm quicker than the first.

9. Assemble. Place half your scrambled eggs along with half your sweet potato mixture in each tortilla. Top with green onions and tomato and add any additional salt and pepper necessary. Enjoy with a side of avocado or half a banana!
