Yellow Cauli-Rice With Chicken

Sometimes I really want a familiar dish like rice with chicken or paella but I can no longer eat rice which is the main ingredients in those dishes. I did, however, buy a head of cauliflower and decided to use some of the chicken in my fridge to make some yellow cauli-rice with chicken. The end result was very good. I was extremely pleased with the flavor and consistency. Even my husband who does not have to be on the same diet as me, really enjoyed it.

Here’s what you’ll need {serves 2}:

1/2 medium head of cauliflower

1/2 red bell pepper

2 cloves of garlic

1/2 – 1 red onion {depends on how much onion you like}

1/2 packet of Sazón with Azafrán (basically a type of buillon that tastes so much better)

1 cup of chicken broth

broccoli or peas {optional}

Chicken {breast, thighs or drumsticks will work well – keep them on the bone for this recipe}

Mojo Criollo Marinade

Method:

1.  Marinade your chicken for at least two hours prior to cooking.

2. Chop your veggies and prepare your cauli-rice {grate on a box grater or pulse in a food processor}.

3. Get your oven preheated to 400 degrees {I made my chicken in our new toaster oven and it was fantastic}. Once your oven is to temperature, get your chicken in there and cooking for about 30-40 minutes depending on how thick your pieces are.

4. In a medium skillet heat some EVOO or coconut oil and cook your onions, garlic and peppers over medium heat or until the onions are translucent and fragrant. Add in your chicken broth to de-glaze and add some flavor. Let the liquid reduce almost all the way. Add in your peas or broccoli if you are using any.

5. Add in your cauli-rice and spread thin to cover the whole bottom of your pan. At this point your can put in your Sazón with Azafrán which will turn your rice yellow.

6. Let your cauli-rice cook for 2-3 minutes and then stir and flatten and cook for another 2-3 minutes repeat until there is no more liquid in the pan and the cauliflower is somewhat sticking to the pan.

7. Check your chicken and make sure it’s cooked all the way through.

8. Serve the chicken on top of the cauli-rice mixture and enjoy!
