Buffalo Chicken Salad

I was never a huge fan of buffalo sauce when I was a kid. I always though it was way too spicy and never really wanted it. Now, as an adult, I can handle a little more heat and often even crave some spice. One of my favorite salads has actually become buffalo chicken salad. It’s so tasty and so awesome, but so easy to make! You are eating a healthy meal that disguises itself as too good to be true. It’s seriously one of my favorite meals!!

You can make the salad part any way you like. Use kale or romaine, iceberg or a garden medley. Add tomatoes, cucumbers, black olives and avocado – the combinations are endless. Use what you like and you won’t go wrong.

Here’s how to make the chicken:

You’ll Need

1 lb of boneless, skinless chicken thighs {don’t use breast, it will be too dry}

1 tbsp of balsamic vinegar

1 tbsp of olive oil

2 cloves of garlic

seasoning of your choice {or just salt and pepper}

1/4 cup of hot sauce of your choice {I like to use chalulla}

2 tbsp melted butter

Method:

1. Pre-heat your George Foreman grill  or grill pan. I prefer to use the George Foreman because I know the chicken is cooking evenly on both sides and I don’t even have to worry about it.

2. Place your oil and vinegar and garlic in a bowl. Place your chicken in the bowl and make sure that they are smothered in the mixture. Add your seasoning to both sides and place on your grill. Repeat until all of your chicken pieces are on the grill. Let them cook for 5 – 6 minutes depending on the thickness of your pieces.

3. While your chicken is cooking, melt your butter in the microwave and then mix with your hot sauce.

4. Once your chicken is done, set it aside to rest. At this point you should have all of your greens out and ready to assemble. Get your salad ready, because it’s about to be rocked.

5. Cut your chicken into bite size pieces and dip them in your hot sauce, now turned buffalo sauce.

6. Place your chicken on your salad, get some dressing on there and let your taste buds enjoy!
