Healthy Low Carb Egg “McMuffin”

We’ve all been there – out and about in the morning, maybe running errands or at an appointment when it strikes you that McDonald’s is still serving breakfast! There are few things worse for you that taste so good.  When I was a kid, McDonald’s breakfast was a treat – heck it still would be were it not for the diabetes.

A couple nights ago, I found that I wasn’t very hungry for dinner, but I had purchased some low-carb english muffins and thought that a homemade egg mcmuffin would be fantastic. It was quick and easy and SO DELICIOUS. You’ll never want to eat an egg mcmuffin from McDonald’s again after you have one of these.

Homemade Egg McMuffin

Ingredients:

Low-carb english muffins – I like the healthy life brand and only eat half of one at a time.

Deli Turkey {I used pepper turkey}

Mayo

Egg

Swiss Cheese {I used half a slice}

1 teaspoon Coconut oil or1 tablespoon butter

Method {this is so easy it’s almost ridiculous to post, but here it is anyway!}:

1. Toast your half of muffin in a toaster. While that works its magic, heat a skillet to medium heat with some coconut oil {if you don’t have coconut oil then butter will do just fine}.

2. Take out your meat, cheese, mayo and egg. Once your english muffin is done toasting then it’s time to start assembling. Put your desired amount of mayo on your muffin, place your turkey on top of that in a mound.

3. Now that your coconut oil is up to temperature, fry your egg to your desired consistency. I like mine done on the outside but still runny on the inside. Once I flip mine, I turn off the heat and put my cheese on top then let it sit in the skillet for a few more minutes.

4. The final assembly: Place your egg with what should be slightly melted cheese on your meat. Sprinkle with salt and pepper and you’re ready to dig in!

It’s amazing how such a simple recipe yields such a delicious meal. This is perfect for breakfast or even for a light dinner or lunch. If you try this, please let me know how it turned out. Also, if you use a different meat or cheese, let me know how you liked it!
